1 can full-fat coconut cream
3/4 cup dark chocolate chips or chopped dark chocolate (I prefer 72% cacao or higher)
Instructions
- Drain the liquid from the coconut cream and put the solids into mixing bowl (you can save the liquid for smoothies).
- Melt the chocolate in a double boiler or microwave (30 seconds at a time, stirring until smooth).
- Let the chocolate cool slightly, then add it to the coconut cream. Whip using a hand mixer or whisk until luxurious and fluffy. Don’t worry if it’s a little runny; it’ll “mousse up” more when chilled.
- Chill the mousse in the fridge for about 60 minutes.
- Serve chilled, in a small dish as-is or enjoy with a few berries on top.
Notes
If the mousse isn’t sweet enough for you, mix in 1-2 teaspoons of maple syrup before chilling.
