Description

You can have dark chocolate luxury without so much guilt. This mousse is rich, indulgent, and shockingly simple. You can find coconut cream near the canned coconut milk at your local grocer.


Ingredients

Scale

1 can full-fat coconut cream

3/4 cup dark chocolate chips or chopped dark chocolate (I prefer 72% cacao or higher)


Instructions

  1. Drain the liquid from the coconut cream and put the solids into mixing bowl (you can save the liquid for smoothies).
  2. Melt the chocolate in a double boiler or microwave (30 seconds at a time, stirring until smooth).
  3. Let the chocolate cool slightly, then add it to the coconut cream. Whip using a hand mixer or whisk until luxurious and fluffy. Don’t worry if it’s a little runny; it’ll “mousse up” more when chilled.
  4. Chill the mousse in the fridge for about 60 minutes.
  5. Serve chilled, in a small dish as-is or enjoy with a few berries on top.

Notes

If the mousse isn’t sweet enough for you, mix in 1-2 teaspoons of maple syrup before chilling.
